MUTTON / LAMB CURRY

This recipe is good for 2-3 people and takes 30-40minutes to prepare. An hour longer for slow cooking the lamb or mutton.

What you will need:

  • 500 gm of cubed lamb meat 
  • ⅓ to ½ a cup of Water (use the curry jar as a measure)
  • 1 Jar ollo foods ‘Mild Curry Sauce
  • Salt to taste

Optional but recommended:

  • 2 tsp Coriander Leaf to garnish
  • pinch of red chilli powder for extra heat if desired
  • squeeze of lemon or lime

Preparation & Cooking:

The best meat to use for this curry is lamb or mutton that has had the fat removed and cubed into bite sized pieces. If you use meat on the bone, allow an additional 5-10 mins to the cooking time. 

Procedure:

In a suitably sized pan add the entire contents of the mild curry sauce and fry in 2-3 tablespoons of vegetable oil. Bring to a simmer stirring to ensure the c=sauce does not catch. Once the sauce starts to split, add the lamb / mutton and mix well. Using the sauce jar as a measure, fill ⅓ to ½ with cold and add to the saucepan. Cover with a lid and reduce the heat to lowest setting and leave to cook for 10-15 minutes. Stir now and again to ensure that the curry is thoroughly cooked and that the consistency is to your liking. Lamb or Mutton will require longer to tenderise, so cook on the lowest heat for a further 30-40 mins and add a little water if the sauce starts to get too thick. Finally add salt to taste and garnish with the coriander leaf. Serve with either rice or flat bread (Nan or Pita).
