BBQ CHICKEN

What you will need:

  • 1 Whole medium-sized chicken1.6Kg (3.5lbs) or equivalent weight of jointed pieces. Preferably wings, thighs or drumsticks.
  • 1 tsp salt and fresh ground pepper to taste.
  • 1 Lemon finely grated zest and juice (Unwaxed if possible)
  • 1 tbsp of cooking oil
  • 1 bottle of ollo foods ‘BBQ Glaze'

Preparation & Cooking:

  • Joint the chicken into portions making deep slits in the flesh to ensure that the flavours penetrate the meat and it cooks quickly and evenly.
  • Dry the meat thoroughly with kitchen towel (paper) to remove any surface moisture.
  • Finely grate the zest & juice the lemon; add the oil and pepper and mix with one a teaspoon of salt.
  • Pre heat the oven to 190-200C (Gas Mark 5/6).
  • In a large bowl combine the chicken joints and seasoning and let stand for 10 minutes.
  • Lay the chicken joints on a shallow tray and spread out evenly.
  • Cook for approximately 30-35 mins to get some colour on the skin, this will depend on your oven. Remove from the oven and discard any cooking juices.
  • In a large bowl add sufficient sauce to taste and gently toss the chicken joints before placing back on the tray and continuing to cook for a further 20-25 minutes. Turn 2-3 times as the sauce thickens to get even colour and baste as required so that the meat is evenly coated.
  • Alternatively, the chicken can be cooked with indirect heat on the BBQ to give that authentic grilled look and flavour. Ensure that the meat is adequately cooked and turn frequently to avoid burning the sauce.
